lemon tart


I was thinking about this tart sometime ago. In the end I came up with the recipe and I made two during the week ;). You can go ahead and do it for some event and just for you and pleasure of your family.  Recipe found on Kwestia Smaku - slightly modifying it.

Przymierzałam się do tej tarty jakiś czas. W końcu wpadłam na przepis i zrobiłam w ciągu tygodnia już dwie ;). Możecie śmiało szykować ją na imprezy jak i po prostu dla siebie i przyjemności domowników. Przepis znalazłam na Kwestii Smaku - lekko go modyfikując.

lemon tart

cake:
180 g flour
2 tsp castor puder (or brown sugar)
100 g cold butter
1 yolk
2 tbsp cold water

lemon curd:
juice from 2 lemons
juice from 1 orange
pell from 1 lemon
125 ml water
2 tbsp potato flour
70 g sugar (or less)
100 g butter
1 egg
3 yolks

meringue:
4 eggs white
180 g sugar
2 tsp potato flour


Combine flour with salt and sugar, add the butter, cut into pieces and mix by mixer (I did it by hand - until a fine crumb cake). Add egg yolk and water and continue to mix or knead with hands so as to work out a smooth dough. Form a ball and put in the fridge for an hour (could be for about 2 hours). We focus oven to 190 degrees C. If you remove the dough from the refrigerator leave it for a few minutes and roll out. Grease a cake mold with butter, put cake and punctured with a fork. Cover with aluminum foil (on top put grains of rice, dried beans or other load). Put thecake mold in the oven and bake for about 15 minutes, then pull the film out of the load and bake about 13 minutes (the cake has to blush).

In the meantime, do the cream. Squeeze juice from lemons and orange, pour into the pot and add the water, lemon peel, potato flour and sugar. Stir and bring to a boil. Leave it out of the oven and add the butter - stir vigorously until dissolved. Add the egg and egg yolk and mix again, so that was a solid mass. Weight must be thick. On the ground floor put aluminum foil - must touch the ground so as not to set up a skin or weight is not dried.

Prepare meringue. Eggs white froth by mixer and gradually add sugar. Foam must be rigid. At the very end, add potato flour. Remember, eggs white must be at room temperature!

Warm up the oven to 180 degrees F. In the bottom (can be cooled down or warm) put cream and meringue - it must stick to the cream. Bake for 15-20 minutes. Meringue should be lightly browned. Remove from the oven and cool it thoroughly. Enjoy!




tarta cytrynowa

ciasto:
180 g mąki
2 łyżki cukru pudru (albo brązowego)
100 g zimnego masła
1 żółtko
2 łyżki zimnej wody

krem cytrynowy (lemon curd):
sok z 2 cytryn
sok z 1 pomarańczy
125 ml wody
2 łyżki mąki ziemniaczanej
70 g cukru (albo trochę mniej)
100 g masła
1 jajko
3 żółtka

beza:
4 białka
180 g cukru
2 łyżeczki mąki ziemniaczanej

Mąkę połączyć z solą i cukrem dodać masło pokrojone w kawałeczki i zmiksować mikserem (ja robiłam to ręcznie - aż powstaną drobne okruszki ciasta). Dodać żółtko i wodę i dalej miksować lub wyrabiać rękami tak, aby wyszło gładkie ciasto. Formujemy kulę i wkładamy na godzinę do lodówki (może być na ok. 2 godziny). Nastawiamy piekarnik na 190 stopni C. Wyciągamy ciasto z lodówki i zostawiamy na kilka minut, by trochę się ociepliło, następnie wałkujemy. Formę na ciasto smarujemy masłem, wykładamy ciasto i nakłuwamy widelcem. Przykrywamy folią aluminiową (na wierzch kładziemy ziarna ryżu, suchą fasolę lub inne obciążenie). Wkładamy formę do piekarnika i pieczemy ok. 15 minut, potem wyciągamy folie z obciążeniem i pieczemy ok. 13 minut (ciasto musi się zarumienić).

W międzyczasie szykujemy krem. Wyciskamy sok z cytryn i pomarańczy, wlewamy do garnka i dodajemy wodę, skórkę z cytryny, mąką ziemniaczaną i cukier. Mieszamy i doprowadzamy do zagotowania. Odstawiamy z kuchenki i dodajemy masło - energicznie mieszamy aż się rozpuści. Dodajemy jajko i żółtka i znowu mieszamy tak, by powstała jednolita masa. Masa musi być gęsta. Na dno masy kładziemy folię aluminiową - musi dotykać masy po to, żeby nie utworzył się kożuch ani masa się nie wysuszyła.

Szykujemy bezę. Białka ubijamy mikserem i stopniowo dodajemy cukier. Piana musi być sztywna. Pod sam koniec dodajemy mąkę ziemniaczaną. Pamiętajcie, ze białka muszą być w temperaturze pokojowej!

Piekarnik rozgrzewamy do 180 stopni C. Na spód (może być ostudzony lub ciepły) wykładamy krem, a następnie bezę - musi przylegać do kremu. Pieczemy 15-20 minut. Beza musi być lekko zarumieniona. Wyjmujemy z piekarnika i dokładnie studzimy. Smacznego!

muffins with strawberries and almonds



Over the weekend I made version of these muffins, but with strawberries and almonds and buttermilk. I could not resist strawberries that here are in every store. Strawberries from Portugal, but I do not know, or even the season will be different here. I put the cake in tin molds and basically what came out was like brioche than muffins;).

W weekend zrobiłam wersję tych muffinów tylko, że z truskawkami i migdałami oraz z maślanką. Nie mogłam się oprzeć truskawkom, które tutaj są już w każdym sklepie. Truskawki z Portugalii, ale nie wiem czy nawet w sezonie będą tutaj inne. Ciasto włożyłam do blaszanych foremek i w zasadzie to, co wyszło przypominało brioche niż muffiny ;).

new york cheesecake



There was a bit of silence (I was sick for more than a week), but hello - I'm back;). Promised a recipe for New York cheesecake. Recipe from kwestia smaku, with a mini amendments. I recommend you warmly, because it is delicious, delicate - just heaven in your mouth;). Unfortunately I only have one picture of it, but I do it again that's for sure I'll put some photos. Speaking of New York cheesecakes, we ate delicious  just before Easter made ​​by a colleague - I must take the recipe.

Trochę była tu cisza (byłam chora przez ponad tydzień), ale witam - jestem znowu ;). Obiecany przepis na sernik nowojorski. Zaciągnięty z kwestii smaku, z mini poprawkami. Polecam Wam serdecznie, bo jest pyszny, delikatny - no niebo w gębie ;). Niestety mam tylko jedno jego zdjęcie, ale jak zrobię go ponownie to na pewno dorzucę fotek. A propos serników nowojorskich, to przed Wielkanocą jedliśmy przepyszny sernik zrobiony przez koleżankę - koniecznie wezmę przepis i wypróbuję.

300 g of petit beurre cookies
180 g of melted butter
1-1,20 kg fat creamy cheesecake
6 eggs
5  yolks
200 g caster sugar
3 tsp of vanillia extract
juice from 1/2 lemon

cream:

500 ml sour cream (18 %)
50g caster sugar

cocoa for sprinkle


The form should be sealed with removable rim carefully with aluminum foil - are releasing it at the bottom so that the sides were out of form. Biscuits exactly breaking on the sand (I did it with a pestle for herbs) and mix with melted butter. Distribute the weight of the springform pan and put in the refrigerator.
At the bottom of the oven set the pan filled halfway with boiling water. Preheat oven to 180 degrees. More than once I checked this with baking cheesecakes few times - the dough is very delicate. For smooth mixes cheese, eggs, egg yolks, vanilla and lemon juice. The mass pour on biscuits and bake 60 minutes plus another 10 minutes. Cool down in the oven for 10 minutes, open the door and evade another 10 minutes. After removing cool down further.
Readjusted oven to 180 degrees. We do cream - cream mixes with sugar. The mass of the cooled down pour cheesecake. Put in the oven for 10 minutes. Cool down the cheesecake, and then put in the  refrigerator. Sprinkle with cocoa. Cake tastes best when chilled.


sernik nowojorski

300 g herbatników petit beurre
180 g masła roztopionego
1- 1,20 kg tłustego sera śmietankowego
6 jajek
5 żółtek
200 g cukru pudru
3 łyżeczki ekstraktu z wanilii
sok z 1/2 cytryny

krem:
500 ml gęstej kwaśnej śmietany 18%
50 g cukru pudru

kakao do posypania


Formę z odpinaną obręczą uszczelniamy dokładnie folią aluminiową - wypuszczamy ją tak na dnie, by boki były poza formą. Herbatniki dokładnie tłuczemy na piasek (robiłam to tłuczkiem do ziół) i mieszamy z roztopionym masłem. Masę rozprowadzamy na tortownicy i wkładamy do lodówki.
Na sam dół piekarnika ustawiamy blachę wypełnioną do połowy wrzącą wodą. Piekarnik nagrzewamy do 180 stopni.  Niejednokrotnie sprawdzałam ten myk przy pieczeniu serników - ciasto jest wtedy bardzo delikatne. Na gładką masę miksujemy ser, jajka, żółtka, wanilie i sok z cytryny. Masę wylewamy na herbatniki i pieczemy 60 minut plus kolejne 10 minut. Studzimy w piekarniku 10 minut, uchylamy drzwiczki i studzimy kolejne 10 minut. Po wyjęciu studzimy dalej. 
Piekarnik ponownie nastawiamy na 180 stopni. Robimy krem - miksujemy śmietanę z cukrem. Masę wylewamy na ostudzony sernik. Wkładamy do piekarnika na 10 minut. Sernik studzimy, a następnie wkładamy do lodówki. Posypujemy kakao. Ciasto najlepiej smakuje, gdy jest schłodzone.
