pumpkin and tomato cream with yellow curry paste



This week, I did have this soup - cream twice and it came a little differently. The second time was more essential and creamy. This is idea for a quick dinner - as it usually happens with such soups.

W tym tygodniu robiłam tę zupę - krem dwa razy i wychodziła mi trochę inaczej. Za drugim razem była gęstsza i bardziej esencjonalna. To pomysł na szybki obiad - jak to zwykle z takimi zupami bywa.




pumpkin and tomato cream with yellow curry paste

for 4 persons

1-1,2 kg pumpkin
4 tomatoes
tin of chopped tomatoes or tomato passata
270-300 ml coconut milk
3 tbsp of yellow curry paste
1 garlic clove
1 tbsp olive oil
1-2 small dried chilli
salt
few coriander seeds
few leaves of mint

Pour olive oil into the pan and add the curry paste and garlic clove - fry for a few seconds. Add the chopped pumpkin cubes (of course without seeds) and fry a few minutes. Then add the peeled and chopped tomatoes, and a can of tomatoes (or passata - about 300 ml). Add a pinch of salt (or more), coriander seeds and chilli and allow to boil. Then add the coconut milk and again we let the soup boil. Blend it and again a little warm up. Pour into bowls / plates and decorate with fresh mint.
The accompaniment may be toasts or chickpeas.



krem z dyni i pomidorów z żółtą pastą curry

porcja na 4 osoby

1-1,2 kg dyni
4 pomidory
puszka krojonych pomidorów lub passata pomidorowa
270-300 ml mleczka kokosowego
3 łyżki żółtej pasty curry
1 ząbek czosnku
1 łyżka oliwy
sól
kilka nasion kolendry
kilka listków mięty

Do garnka wlewamy oliwę i dodajemy curry oraz ząbek czosnku - podsmażamy kilka sekund. Dodajemy pokrojoną w kostki dynię (oczywiście bez pestek) i podsmażamy kilka minut. Potem dodajemy obrane ze skórki i pokrojone pomidory oraz puszkę pomidorów (lub passatę - ok. 300 ml). Dodajemy szczyptę soli (albo więcej), nasiona kolendry i chilli i pozwalamy, by zupa się zagotowała. Wlewamy mleczko kokosowe i znowu pozwalamy, żeby zupa się zagotowała. Blendujemy i trochę podgrzewamy. Wlewamy do miseczek/talerzy i przystrajamy świeżą miętą. Dodatkiem mogą być grzanki czy cieciorka.
